A typical Jersey cow produces 3-6 gallons of milk per day at peak lactation, dropping toward 1-2 gallons by end of lactation. Annual production is roughly 4,000-5,500 lbs (compared to 20,000+ lbs for a high-producing Holstein). Butterfat averages 5%+, ideal for butter and cheese.
