Is a Jersey cow good for beginners?

Yes — Jerseys are widely considered the best beginner dairy cow. Small enough to handle, docile temperament (especially the cows; bulls are different — see below), high-butterfat milk for cheese and butter, and well-established as homestead breed. Available everywhere with strong genetics.
